When it comes preparing the best possible white tea, it's all about the getting the variables just right. The tea should be infused in water of 80 degrees Celsius for 3-5 minutes, giving the leaves just the right amount of time to work their magic. If the water is too hot then the infusion won't work properly and you'll get a bitter taste rather than the delicate, subtle one that makes white tea so damn good!
