The Black Dragon

One of the most popular teas in China; oolong tea sits somewhere between green and black tea when it comes to taste. It's known as the 'Black Dragon' because the leaves are dark, long and curly, just like the traditional mythical creature of Chinese folk lore.

According to the story, oolong tea was first produced in the perfect natural environment for the cultivation of tea; Mt Wu Yi Shan in Fujian Province about 400 years ago, just as the Ming Dynasty was coming to an end. Even after all those years, oolong tea is enjoyed by people the world over, especially in restaurants thanks to its ability to retain, and even improve its taste after 4 or 5 infusions.

If you stick to infusing oolong in water that is 80-100 degrees Celsius, then you should get a clear golden green colour, which is exactly what you're looking for.
